No pic at the moment... but I like to shred up the meat from a rotisserie chicken, mix with canned mole or enchilada sauce. Roll up in tortillas and bake with a bit more sauce on top. Add some guac if you have room for the calories. Use low carb tortillas if you’re dieting. Easily scalable recipe based on what your goals are at the moment.

Sounds really good! I love Mole sauces. I’m going to try these later in the week
