Yeah, I used a dry aging technique in the refrigerator{left it uncovered for 3 days after dry seasoning}, then grilled. I seasoned it with Blacks BBQ seasoning from this little town south of Austin, TX! Lockhart.

Grass fed Bison with 1 cup long grain white rice,and steamed greens.Use grass fed butter on greens and rice. It's a nice 2nd meal of the day for me.

! Bison is a great red meat source! Love the stuff. I use it for a lot of dishes and it has lower fat and cholesterol than beef. Keep on posting, I luv FOOD! Lol
