It would help if you could give us some stats. Like height, weight, bf%. Also a breakdown of your diet.
Pro/Carbs/ Fat. Are you using a aromatase inhibitor?
One thing that jumps out at me is your overtraining. 2hrs/day, 6 days week? An hour/day is plenty. Get in, get out. Give 1 min between sets. Warm up set, 3 working sets. Last set to failure.
If you are gaining to much fat, carbs are the first I would lower. Keep them centered around your workout.
Pre and Pwo. But I can’t say until I see your macros.

When u say ur diet is right on could you elaborate?
I’m not certain how u can gain fat without being in too much of a caloric surplus.

Gaining too much weight
You gain fat when you are in too great a calorie surplus and not getting adequate cardio. You don’t need to get chubby to gain muscle. Work out hard and hit your protein goals. Monitor your calories and if your gaining weight reduce the calories. If you’d like the cookbook I use and the program send me a dm

Your not hijacking it since OP hasn’t bothered to post. Carbs are used for energy expenditure, protein is for the building blocks of muscle, and fat is good for heathy brain and hormone function. I like to eat a pre workout meal with carbs(slow digesting) to fuel my workout. Pwo carbs( high glycemic) spike insulin, which transports nutrients to your muscles, to refuel glycogen stores. Insulin is highly anabolic.
That’s where I would focus carb consumption the most. If you are gaining too much fat, then cut back on carbs in other meals. Instead opt for a pro/ fat meal. Especially after 6pm. It is not necessary to consume carbs close to bed. Of course everyone is different and some need much more than others.
Performing cardio 3x week is a good way to keep from gaining fat during a bulk and is keeps you healthy, especially during winter months when we’re not as active.
The goal is to start bulking from a lean state. Slowly add on quality lean muscle, over a longer period of time. The faster you gain, the more likely it’s partially water and you wont be able to keep that size, once you come off. Diet is key.

Carb timing is essential!!
Took me a long time to figure it out!

Right? Especially on those compounds, such as Tren and DHB, which melt the fat off myself personally. I think OP may be endomorphic or is holding water.

I have to admit I need to be more disciplined
with cardio, but I usually don’t have this problem of gaining fat like I am. Maybe just getting older and I need a little more intensity?
