Ingredients
Lean pork loin cut up into chunks
Onions, 2 med, diced large
Garlic, chopped, amount should suit your taste
Jalapenos, chopped small 1.5 each
Kosher salt 1 Tablespoon
Pepper 1 Tablespoon
Cumin, amount should suit your taste...be careful if you never used cumin, its strong, imo.
Cilantro, 1 bunch. Rough chop the leaves and save for later.
One bag frozen peepers mix
Tomato juice, small can
Diced tomatoes
Corn, 1 can
Blck beans, 1 can

Technique

Add pork, onions, garlic, and spices to a large pot and bring to simmer on med/med high heat, stirring occasionally. Once a simmer is reached, turn heat down to maintain slow simmer and cover with lid. Allow to cook for at least 2 hours or until the pork is fall apart tender. Stir every 15 min. When meat is fall apart tender, break it up into smaller pieces with your spoon, then add remaining ingredients and heat through. Season with salt to taste. I use corn tortillas to avoid wheat flour. Top with sour cream.

Take the time to do this guys, you won't regret it. It is awesome.

Got this recipe from another forum, can't take credit for coming up with this myself!

Bump. I highly recommend giving this a go. Made it last week. It's perfect for fall/winter eating.
