Ingredients



˝ small red onion (http://www.bbc.co.uk/food/red_onion), thinly sliced
2 large ripe tomatoes (http://www.bbc.co.uk/food/tomato), roughly chopped
˝ cucumber (http://www.bbc.co.uk/food/cucumber), deseeded and roughly chopped
100g/3˝oz reduced fat feta (http://www.bbc.co.uk/food/feta_cheese) cheese, drained and cut into cubes
50g/1ľoz black olives (http://www.bbc.co.uk/food/olive), pitted and drained (in brine not oil and preferably Kalamata olives (http://www.bbc.co.uk/food/olive))
small handful fresh mint (http://www.bbc.co.uk/food/mint) leaves
˝ tsp dried oregano (http://www.bbc.co.uk/food/oregano)
2 tsp extra virgin olive oil (http://www.bbc.co.uk/food/olive_oil)
2 tsp fresh lemon juice (http://www.bbc.co.uk/food/lemon_juice)
sea salt and freshly ground black pepper
2 wholemeal pitta breads (http://www.bbc.co.uk/food/pitta_bread), warmed


Preparation method



Put the onion, tomatoes and cucumber in a bowl and season to taste.
Scatter the feta, olives and mint leaves on top. Sprinkle over the oregano and toss lightly. Drizzle over the oil and lemon juice and serve with warmed pitta bread.
