Made these a few times. The recipe was originated by this chick: 11730. She's a USAPL powerlifter & figure competitor. This chick's squat & DL make me question my own manhood @ times...not to mention she's friggin' cute!

Ingredients


1 can black beans, drained and rinsed
100 g pumpkin puree
100 g fat free cream cheese
2 whole eggs
125 g egg whites
40 g oat flour (or 40 g oats, blended into flour)
15 g honey
25 g coconut flour
60 ml sugar free syrup, I used Walden Farms
14 g unsweetened baker's chocolate, melted and cooled
30 g dark cocoa powder
5 g salt
Sweetener to taste
1 tsp baking soda
1 tsp baking powder
1 tsp almond extract
25 g Lily's stevia-sweetened chocolate chips

Instructions


Preheat oven to 350 F
Spray a large glass baking dish with non-stick spray.
In a blender or food processor, combine all ingredients through sweetener. Blend until fully combined.
Add baking soda, baking powder and almond extract. Pulse until just combined.
Fold in chocolate chips.
Pour batter into prepared baking dish and bake for about 30 minutes.

When I made mine, I added a couple scoops of Chocolate whey protein. I plugged the recipe into MFP & I think it bumped the protein content by ~5g per brownie. Because of the moisture content, you need to refrigerate them. They're best when warm. I nuke them for ~30sec when I want to eat one. Top them w/ some of that Halo Top Ice cream & you feel like you're actually eating dessert!
