Slow Cooker Chili-Spiced Braised Beef with Green Beans Recipe

Ingredients

2 lb boneless beef chuck, trimmed of excess fat and cut into 1 1⁄2-in. pieces
6 cloves garlic, finely chopped
1 to 2 jalapeņo peppers (seeded, if desired), sliced
1 large onion, chopped
2 Tbsp fresh lime juice, plus wedges for serving
1 Tbsp each chili powder & salt substitute
1⁄4 lb green beans, thinly sliced crosswise
1 10-oz box couscous
1/2 cup fresh basil, sliced

Preparation

In a 5- to 6-qt slow cooker, combine the beef, garlic, jalapeņos, onion, lime juice, chili powder and 1⁄2 tsp salt.
Cook, covered, until beef is very tender, 7 to 8 hours on low or 4 to 5 hours on high.
Stir in green beans, cover and cook for 3 minutes. Meanwhile, cook the couscous according to package directions. Spoon the beef, vegetables and sauce over the couscous and sprinkle with the basil; serve with the lime wedges, if desired.
