Southwestern Beef & Chicken Strips

This is what I ate earlier today.

Total Time: 20 min.

Ingredients

1-1/2 pounds beef top sirloin steak, cut into thin strips
1 cup of boneless/skinless chicken breasts cut into cubes
1 medium onion, sliced
1 medium sweet red pepper, cut into thin strips
2 tablespoons taco seasoning
1/4 teaspoon salt substitute
1/4 teaspoon pepper
2 tablespoons xtra virgin olive oil oil
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups frozen corn,unsalted, thawed
1/2 cup picante sauce
2 teaspoons dried cilantro flakes
1 cup white rice (or quinoa if desired)

Directions

Prepare rice according to package and set aside.

In a large skillet, stir-fry the beef,chicken, onion, red pepper, taco seasoning, salt and pepper in oil until meat is no longer pink. Stir in the beans, corn, picante sauce and cilantro; heat through. Serve over rice.
