F.I.S.T.'s Caribbean Ostrich Steaks & EGGS

Ostrich is a healthy and delicious lean substitute for any red or white meat in any of your favorite recipes. It's loaded with zinc - one of the key ingredients for maintaining healthy eyes - plus, it absorbs seasonings, so it's highly versatile.

Had some left over Ostrich steaks so I just made this for this mornings breakfast.GOOOOOOD EATIN!

INGREDIENTS

1/2 cup(s) olive oil
1/2 cup(s) orange juice
1/2 cup(s) 1% milk
1/2 cup(s) lime juice
2 scallion(s) (green onions), chopped
1 tablespoon parsley, fresh, chopped
1/2 pepper(s), jalapeno, seeded and minced (wear plastic gloves when handling)
pepper, black, coarsely ground
6 ostrich, tenderloin fillets
3 Lge Eggs

PREPARATION

Fry eggs to your linking as far as doneness.

Combine the oil, orange juice, lime juice, scallions, parsley, jalapeņo, and black pepper to taste in a large zip-top bag. Add the ostrich and seal the bag, pressing out excess air. Marinate in the refrigerator for 2-3 hours.

Preheat a grill. Drain the steaks (discard the marinade). Grill the steaks over high heat for 2-3 minutes on each side, until browned. Serve with eggs and whole wheat toast.
Serving Size: 1 steak - about 5 oz.
