Ingredients
6 slices wholemeal bread
1-2 servings protein powder
½ cup self raising flour
4 large cooking apples, peeled and cored
2 Tbs. Lemon juice
2 Tbs. Granulated sugar
2 tsp. Ground cinnamon
6 large egg whites (add 2 egg yolks, if desired, for fluffier pancakes)
¾ cup skim milk

Directions

With the chopping blade of a food processor, crumb bread and place in large mixing bowl. Add protein powder and flour to bread crumbs and stir with a fork.
Grate apples. Place in medium mixing bowl and sprinkle lemon juice, sugar, and cinnamon over apples. Stir with a fork to mix. Add egg whites and milk. Stir to mix again. Add apple, egg mixture to bread crumb mixture and stir well with fork to blend.

Generously spray frying pan with nonstick cooking spray. Preheat to medium high heat. With ¼ measuring cup, dollop batter onto heated griddle. Spread batter to 4-inch circles. Cook until both sides are golden brown and pancakes feel light. Don’t turn more than twice per side. Makes 16 pancakes.

LOL sorry to say my wife is no Betty Crocker if i want something healthy im in the kitchen if were ordering out she in charge!!!
