I call this "walk-away" chicken. You toss it in a pot and.....walk away. Simple!



Ingredients
Water (enough to cover chicken)
1- 4 lb. whole chicken
3-4 stalks celery; rough chopped
1 large sweet onion; diced
1 teaspoon pepper – divided
1 teaspoon salt – divided
½ teaspoon oregano
½ teaspoon celery salt
1½ teaspoons parsley – divided
1-3 cups long grain white or brown or wild rice....your choice



Instructions
In a large stock pot bring water, chicken, celery, onion, ½ teaspoon pepper, ½ teaspoon salt, oregano, celery salt, 1 teaspoon parsley to boil, cover and reduce to a simmer for at least an hour (2-3 hours would be preferable) if using stove top. Or, you can put in crockpot over night.

Once cooking of chicken is complete, remove chicken to cool in order to debone.

When cool enough to handle, debone chicken.

Scoop up needed amount of chicken broth to cook rice either in a rice cooker or pot...your preference.
