If you want to reduce the salt you can put in all in an empty protien container with water, shake and then strain through a spaghetti strainer, let it dry in the oven at 200 for about 10 min as a final step.

Less salt just equals longer bake time. You can do it with no salt but takes several hours. Try just soaking in soy sauce then baking. Gives it a little saltiness and keeps it tender.
If you really wanna go next level, soak the strips in a 80/20 mix of Soysauce and whiskey then bake!

I use deer roasts but I always slice it super thin (almost like a thick piece of sandwich meat) and put it in a dehydrator. I've used many recipes but soy sauce, teryaki, some saracha and red pepper flakes is always good. Just keep playing with it until you get it like you prefer.

Half a bottle soy
full bottle teriyaki
1 cup brown sugar
few drops of whorishister sauce
Spoonful of minced garlic
Crushed red peppers to taste
Tapatio to taste the more u put the hotter it will be
Marinade for 24 hours in a bowl with saranwrap on top placed in the refrigerator
I like to use this or the stir fry meat cause its easy but I can use round eye roast or serloin tip roast

I only used the presliced meat when im being lazy cause its easy
Run for 2.5 to 3 hrs at 160 degreese
