So 1 chicken meal most days and I like to use grocery store rotisserie chickens and make quick easy enchiladas a couple days a week just for some much needed variety. And instead of just plain rice, I’ll sometimes make a nice rice noodle salad... and then throw some steak tips or fish on top for a tasty meal.
