      Cauliflower breadsticks: Anyone tried these?

      Ingredients:
      1 medium head of cauliflower (this will produce 4 cups of riced cauliflower)
      4 eggs
      2 cups of shredded mozzarella cheese
      1 Tbsp dried oregano
      4 cloves garlic, minced
      ½ tsp kosher salt
      ¼ tsp ground pepper
      1 additional cup shredded mozzarella cheese for topping

      Made these a few times. I tweaked the recipe. I used 4 egg whites + 2 eggs and the Kraft Fat Free Mozzarella IN the dough. I used the 2% Mozz for the topping. One other tweak I would do is squeeze the water out of the cooked cauliflower. Do your best to get the dough as thin as possible keeping it without holes.

      I think next time I do it, I'm gonna make 2-3 portions up and freeze them. Pretty high in protein (from all the cheese & eggs), low in carbs, and moderate fat. It's jsut a bit of a PITA to make (break out the food processor, etc).

      Use the recipe to make pizza crust, too. Now, it's no delivery, but It'll kick the sh*t out of a pizza craving & help you stick to your diet. It's easier to fit this into your macros compared w/ normal pizza!

      My wife uses cauliflower in place of high glycemic carb sources to make meat loaf and stuffed peppers and kills it every time.
