      One of my Low fat/carb staples: Taco Salad

      This is a simple recipe, but it's REALLY simple and is something I look forward to eating when I have to keep my carbs low. It's a tasty way to up your roughage for the day, too. We all know how low carb CAN bind you up.

      4-6 oz Lean ground beef/turkey (I use 93/7 or 90/10 beef) seasoned/sauteed like you would for tacos - I use taco seasoning in the packets or this stuff I found that comes in a bottle like other seasonings, then I drizzle it w/ Valentina hot sauce while it's cooking
      Romaine or Green leaf lettuce
      75g Plain Fat Free Greek Yogurt
      Salsa (I buy that On the Border stuff from Sam's Club--tastes really good for a store-bought Salsa)
      2 oz Low Fat or Fat free cheese
      Pickled Jalapenos

      I take this to work all the time. I put the lettuce, peppers, and cheese into a big bowl. I put the meat into a separate container & nuke it when it's time to eat. Mix the yogurt & salsa together, add some Valentina. It ends up like a creamy salsa dressing (similar to how salsa & sour cream taste when mixed). Pour the heated meat & the salsa/yogurt mix in the bowl & toss to get everything coated.

      Comes out to like 60g protein. Fat content depends on the meat & cheese you use.

      *Pro tip* I don't often get to do this, but I do when I can. Add 2-3 eggs (over easy, soft boiled, or poached) with a runny yolk. Put them in there & break the yolks before you shake everything together.
