      SALSA CHICKEN & SWEET POTATO FRITTERS

      SALSA CHICKEN & SWEET POTATO FRITTERS

      More of yesterdays menu.Sweet potato fritters and mashed potatoes on the side.I know I know,lots of carbs but it was Christmas.LOL.Of course beer as well.



      Ingredients

      4 skinless, boneless chicken breast halves
      4 teaspoons low sodium taco seasoning mix
      1 cup no salt salsa
      1 cup shredded fat free Cheddar cheese


      Directions

      Preheat oven to 375 degrees F (190 degrees C)

      Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.

      Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.

      Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

      Easy enough.....

      Ingredients

      1 cup whole fat free ricotta

      Heat about 3 inches of oil in a deep heavy pot, fitted with a deep frying thermometer, to 365 degrees F.


      In a large bowl combine the potato, ricotta, sugar, salt and pepper, to taste, with a hand mixer until smooth. Fold in the flour, a little at a time, until just combined.


      Working in batches to avoid crowing the pot,separate and flatten into chip size portions & drop into the hot oil. Fry until golden brown, turning as needed to brown evenly, about 1 to 2 minutes. Drain on paper towels and dust with confectioners' sugar and a pinch of salt. Arrange them on a serving dish and enjoy!


      Cook's Note: Be sure to let the oil return to 365 degrees F between batches.
