Hawaiians know their BBQ for sure! Mesquite wood & hickory are my favs for the grill. The blend of oak & hickory I have is pretty damn good though I will say. Theres so many "smoke" flavors out there in liquid & powder but its not the same. Nothing beats real wood! Uh huhuhuh huh

Indeed! I haven’t smoked lately! Need to do some racks! And a whole brisket!! Eat for a couple days.

A rare but awesome dish I grew up with... AMAZING! "Poutine" (pronounced: poo-teen)
"Poutine is a dish that includes french fries and cheese curds topped with a brown gravy. It originated in the Canadian province of Quebec and emerged in the late 1950s in the Centre-du-Québec area. It has long been associated with Quebec cuisine."
I used turkey gravy, waffle fries, and some cheese curds straight from dairy farm up the road!
