      Let’s Start a Healthy Copycat Recipe Thread!

      So I love cooking and generally am pretty good at it. My mother always cooked dinner it seemed as we lived in the country and takeout or delivery wasn’t an option unless we wanted to drive 40 minutes round trip. My dad also owned a bar and restaurant before I came along. So, I definitely grew up cooking and eating a lot lol. Fast forward a few years and the city expanded out to us(I grew up in one of the fastest developing areas in TX) so it wasn’t but maybe a 15 minute round trip to get takeout. A few years later I also headed off to school and lived smack dab in the middle of the city. Needless to say, the fast food options were almost endless, and I got my first tastes of a ton of fast food restaurants (from chipotle to canes to in n out). Sometimes those places or specific dishes just hit the fucking spot and it seems like you’re only hungry for only that option lol. So, not wanting to derail a diet, making a healthy almost identical version at home for a fraction of the price seems like a good bet! I’ll be posting stuff from main dishes to sauces whenever I make them or if I just see something I think the brotherhood would enjoy! I would love for y’all to post yours up as well!

      Kicking things off with Chipotle’s chicken! Being from Texas, I absolutely love Tex mex and Hispanic food. This chipotle chicken is perfect on rice with beans, tacos, anything really!

      3-4 lbs of boneless skinless chicken breast(cut or pounded out to 1/2 to 3/4inch thickness, although I prefer cutting because it’s less messy and more sanitary I believe)
      1/2 cup white distilled vinegar
      1/2 cup water
      6 cloves garlic minced fine
      2 teaspoons kosher salt
      1 teaspoon ground black pepper
      2 teaspoons cumin
      2 teaspoons dried oregano
      4 teaspoons dried chipotle chili powder(make sure it’s chipotle chili powder not chili powder)
      1/4 cup vegetable oil plus a little more for the last step


      1. Put all ingredients minus the reserved oil for the last step and the chicken in a ziploc bag and mix well.
      2. Add chicken to the bag and remove air from the bag. Close the bag and mix the marinade with the chicken well.
      3. Let marinate for atleast 6 hours in the fridge. I recommend 6-8 as the acid may make the chicken a little mushy if you leave it too long.
      4. After it marinades, remove chicken from marinade and grill on medium to medium high heat until done.
      5. Let chicken rest for 5 minutes and then chop it up into bite size pieces.
      6. This is what makes the chicken special. After you cut it up, heat a skillet up and add remaining oil to the pan. Add chicken and get the edges nice and crispy.
      7. Add what you would like to it and enjoy!
